How To: Ice A Herdy Christmas Cake
With only a few weeks now until Christmas, we’ve iced our Herdy Christmas cake! The design of the cake was based on our Herdy Fund collection boxes that sit pretty in our shops. If you would like to have a Herdy Christmas cake too, just follow the step by step guide below.

Ingredients you will need to ice your Herdy Fund Christmas cake
- A plain white fondant-iced Christmas cake on a base
- A Herdy grey salt and pepper set character
- Green fondant icing
- Rolling pin
- Icing sugar
- Edible glue
- Small paint brush
- Sugar sprinkles
- Greaseproof paper
- Sewing pins
- Cake pop sticks
How to ice your Herdy Fund Christmas cake
1. On a surface coated in sieved icing sugar, take your green fondant icing and roll out with a rolling pin to a thickness of about 5-6mm.
2. We used a bowl with a diameter of around 15cm to cut out a disc of green icing.
3. Use a small brush and a little water to stick the green disc to the top of your cake.
4. With the excess green fondant icing, knead back into a ball to ensure the icing sugar is blended in. Then form a sausage-like shape from the ball.
5. Roll out with a rolling pin and cut to the shape pictured using a knife.
6. With the tip of the knife, cut lines to form the grass tufts.
7. Roll the pop stick around the icing around as shown and secure in place with some pins (and remember Step 13!).
8. Cut a small circle of card to support the icing grass. Using a pencil, poke a little hole in the middle of the circular card and slot on the cake pop stick to hold the fondant grass in place.
9. Using a piece of greaseproof paper, make a cone shape around the fondant grass to keep its shape whilst hardening. Secure with a peg and leave to harden for a couple of days.
10. Using the edible glue, paint around the edge of the green fondant circle, then apply sugar sprinkles as pictured.
11. With a Herdy character from one of our Salt ‘n’ Pepper sets, paint a small amount of edible glue on the underside and set in place on top of the cake.
12. Print off the “Happy Herdy Christmas” speech bubble and roughly cut it out. Stick onto some white card and trim to shape.
13. Once your fondant grass has hardened, unwrap the greaseproof paper and take great care to ensure you remove the pins that held it in place.
14. Use a little bit of edible glue, secure the bottom of the fondant grass and stick it to the top of the cake.
15. Finally, stick the “Happy Herdy Christmas” speech bubble to the cake pop stick and behold!
