Herdy's Chocolate Chip Cupcakes

What could be nicer than treating yourself to some super c-ewe-t Herdy chocolate chip cupcakes? These delicious cupcakes are made with vanilla and chocolate chip sponge, colourful buttercream icing and topped with Herdy's famous smile

Herdy Chocolate Chip Cupcakes with Blue and Pink frosting and Herdy faces

What ewe will need

  • Cupcake cases
  • Piping bag
  • Mixing bowl and spoon
  • Sieve
  • Weighing scales
  • Rolling pin
  • Craft knife
  • Cupcake tin

This recipe will make approx 10 - 12 cupcakes

Cupcake ingredients

  • 175g Butter (at room temperature)
  • 175g Self-raising flour
  • 175g Sugar
  • 100g Chocolate Chips
  • 1/2 tsp Baking powder
  • 1 tsp Vanilla essence
  • 3 Eggs

 

For the decoration

  • 500g Buttercream
  • Food colouring
  • White royal icing (small block)
  • Sprinkles

Method: Pre-Heat the oven to 180 degrees.

 

Step 1

Add the butter and sugar to a large mixing bowl and beat until light and fluffy. Next, add 3 eggs and sieve in the self-raising flour and baking powder. Give the batter a good mix until it becomes smooth.

Step 2

Once you're happy with the consistency of the batter, add 1 tsp of vanilla essence and the chocolate chips. Fold in gently to make sure you don't knock out any air.

Spoon the mixture into cupcake cases (the more colourful the better). The mixture will make approximately 10 - 12 cupcakes, depending on the size of the cases.

Bake the cupcakes at 180 degrees for 20-25 minutes. Check the cupcakes are cooked by sticking a knife into the centre and make sure it comes out clean. Allow the cupcakes to cool on a wire rack.

Step 4

Now you're ready to decorate. If you're channelling your inner Mary Berry you could make your own buttercream icing, but shop-bought will be just fine. Use food colouring to turn the icing into your favourite herdy colours. Spoon the buttercream mixture into a piping bag and using a circular motion, decorate the top of the cupcakes with the buttercream.

Step 5

Now you're ready to make the cute little Herdy faces. Roll out the white royal icing, approximately 5mm thick. With a small sharp knife, cut out the shape of Herdy's head (you might want to use a picture of Herdy for reference and you can also use a cocktail stick to draw out the shape before you cut). Use a black cake decorating pen to draw on Herdy's eyes and smile.

Finally, scatter some multi-coloured sprinkles across the top of your cupcakes and carefully place Herdy’s head on top. Now for the best part, sit back, relax and enjoy your scrumptious Herdy cupcakes.
